Agronomic management in the vineyard
All farm crops are conducted with the certified organic method and the use, where necessary, of preparations and techniques belonging to biodynamic practice. From pruning to harvesting and sorting, all cultivation operations are carried out manually.
Vinification and Aging.
Each grape variety is harvested by hand, carefully selected and vinified separately. Without the addition of selected yeasts, the fermentation and maceration on the skins, depending on the variety, take place for 7/15 days at 25-30°C in steel fermenters and uncovered oak barrels. Subsequently the wine ages for 12/18 months in small French and Slavonian oak barrels.
